Ingredients

  • 400 g condensed milk (about 1 cup + 2 tbsp)
  • 120–150 g desiccated coconut (about 1½–2 cups)
  • 20 g butter (about 1½ tbsp)
  • Pinch of salt (optional)
  • Caramel: 300 g sugar (about 1½ cups)
  • Caramel: 120 ml water (about ½ cup)

Steps

  1. 1Add the condensed milk, coconut, butter and salt to a pan and cook on low heat until thick and pulling away from the sides.
  2. 2Let the mixture cool completely in the refrigerator, then roll into small balls.
  3. 3Chill the balls for 20 minutes until firm.
  4. 4Cook the sugar and water until you get an amber caramel.
  5. 5Dip each ball in the caramel, let the excess drip off, and place on parchment paper until set.

Tips

Chill the rolled balls until properly firm before dipping — and be careful with the hot caramel.
